Big Ol’ Greens and Salmon Salad
INGREDIENTS:
- 3 cups loosely chopped salad greens
- 1 cup chopped broccoli florets
- 1 cup sliced cucumber
- 1 can wild salmon, drained
- ½ avocado diced
- 1 tbsp mayo
- 2 tbsp pistachios, de-shelled
- 1 tbsp green onion, thinly sliced
Dressing:
- 1.5 tbsp olive olive
- 1 tsp dijon mustard
- Juice of half a lemon
- Pinch of sea salt
- Dash of black pepper
- Dash of garlic powder
MAKE:
In a bowl mix the drained salmon with 1 tbsp mayo. Set aside.
In a small bowl add olive oil, mustard, lemon juice, sea salt, black pepper, garlic powder. Whisk until well blended.
In a large serving bowl layer - salad greens, broccoli, cucumber, salmon, avocado and pistachios.
Drizzle dressing over salad and garnish with green onion.
