This banana bread is ooey gooey GOOD! Banana bread has been in heavy rotation because my daughter loves to make it so you can say I’ve become a bit of an expert ;) I think this is my best version yet! The avocado in the recipe makes it extra moist and delicious.
I’m often thinking of ways she can get involved in the kitchen. I have her help me by washing fruit or snapping green beans or slicing bananas. Banana bread is an easy recipe for her to help smash the bananas and pour in the ingredients.
INGREDIENTS:
2.5 bananas
1/4 cup avocado
1 egg
1 tsp vanilla extract
1/3 cup melted butter
1/2 cup maple syrup
1 cup almond flour
1/2 cup coconut flour
1 tsp baking soda
1 sprinkle of sea salt
1/4 cup toppings optional (I used dark chocolate chips and chopped walnuts)
MAKE:
Preheat the oven to 350 degrees. In a large bowl, add egg and beat. Add the banana and avocado and smash. Add all the wet ingredients and mix. Add the dry ingredients and mix until combined (except salt and toppings). Line a bread pan with parchment paper. Pour the bread mixture into the pan and then sprinkle on toppings. Bake for 50-55 minutes until the toothpick comes out clean. Allow to cool, slice and enjoy!
