When I was in my twenties we lived in San Francisco. My husband would get a Pumpkin Spice Latte and a Peppermint Mocha every year to ‘taste the season.’ It was a festive treat and the memory stayed with me. I can still remember walking through the Financial District in the city with a winter coat on and enjoying a pumpkin spice latte with my then boyfriend. I wouldn’t order one from Starbucks today because of the blood sugar spike it would cause. This smoothie is a total “taste the season” drink but it’s loaded with nutrition instead of sugar. You can have this for any meal of the day. It contains protein, fat and fiber to round out a meal :)
INGREDIENTS:
1 cup unsweetened almond milk
3/4 frozen banana
1/3 cup frozen cauliflower (I used riced cauliflower)
1/3 cup pumpkin puree
1/2 cup plain yogurt (I used full-fat yogurt)
1 T almond butter
1/2 t vanilla extract
1/2 t pumpkin pie spice
1 scoop vanilla protein powder
1 heaping cup of ice
MAKE: Add all ingredients to the blender (except the ice). Blend. Add ice and then blend until it’s smooth.
