I do my best to limit my store bought bar consumption. There are a few brands that can be a good option in a pinch however the vast majoriry contain way more sugar than desired. They are dense, highly processed and tend to be big digestive load. So this is how I make a quick bar to have around for the family all week. These are loaded with healthy fats, fiber, and a touch of sweet from the dark chocolate. They will keep your blood sugar levels healthy and be a satisfying snack.
INGREDIENTS:
1.5 cup raw cashews
3 tbsp ground flax seeds
1 cup coconut shreds
1/3 cup almond butter
1/2 cup coconut oil (soft)
1 tsp vanilla extract
1/4 tsp sea salt
3 tbsps cold water
1/3 cup dark choc chips ( I used Lilys )
MAKE:
1. Add raw cashews to the food processor and process until they are broken down evenly. (should be a similar texture to the flax seeds)
2. Add the remaining ingredients (except the chocolate chips) and process until smooth and well combined. After a few minutes, it will be a thick texture.
3. Add chocolate chips and process again until choc chips are mixed in well.
4. Line a bread pan with parchment paper and then scoop the mixture onto the parchment paper. Smooth the top with back of spoon. Cover and place in the refrigerator. Let it set up in fridge for at least 1 hour.
5. Remove from refrigerator and slice into bar size pieces. Store in glass container in the refrigerator or freezer.
